A tangy, tropical, zero-sugar passion fruit margarita sweetened with monk fruit syrup and finished with a bold smoky BBQ salt rim. Keto-friendly, diabetic-friendly, and absolutely worth the Friday.

Ingredients

Passion Fruit Juice

  • 3 fresh passion fruit or ½ cup frozen unsweetened passion fruit pulp
  • 2 cups water

The Margarita

  • cups fresh passion fruit juice from above
  • ½ cup fresh lime juice 5–6 large limes
  • 2 –3 tablespoons monk fruit simple syrup - adjust to taste
  • or allulose syrup for a slightly richer sweetness
  • 12 ounces silver tequila - adjust to taste
  • 3 ounces orange liqueur Grand Marnier or Cointreau
  • Several cups of ice

Smoky Rim

  • 3 tablespoons coarse salt
  • 1 teaspoon smoky BBQ seasoning
  • Lime wedge for the rim

For the Mocktail Version

  • Replace tequila with sparkling water or coconut water
  • Replace orange liqueur with 1 teaspoon orange zest + 2 tablespoons fresh orange juice
  • Increase monk fruit syrup by ½ tablespoon if needed

Instructions

Make the passion fruit juice

  • Scoop out the pulp of each passion fruit with a spoon. Add pulp to the blender and blend for 10 seconds - just enough to separate the jelly from the seeds. Do not over-blend or the seeds will break and add bitterness. Pour through a fine mesh sieve into a large pitcher, pressing the pulp to get every drop.

Make the smoky rim

  • Mix coarse salt and BBQ seasoning on a small flat plate. Run a lime wedge around the rim of each glass and press into the salt mix. Set aside.

Mix the margarita

  • To the pitcher with passion fruit juice, add lime juice, monk fruit syrup (start with 2 tablespoons, taste, adjust), tequila, and orange liqueur. Add ice and stir vigorously until slushy. Taste and adjust sweetness or tequila before serving.

Mocktail version

  • Follow the same steps but replace the tequila with sparkling water or coconut water and replace the liqueur with orange juice + zest. Stir over ice until cold and slushy.

Serve

  • Pour into rimmed glasses over fresh ice. Serve immediately.
