Ingredients

For the tostones

  • 2 green plantains
  • 1,2 tablespoons olive oil for brushing
  • Sea salt to taste
  • 1 squeeze of green lemon A traditional essential to brighten the flavor

For the Garlic Mojo

  • 2 tablespoons flat-leaf parsley finely chopped
  • 2 garlic cloves crushed
  • 3 tablespoons extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  • Prep: Peel the plantains and cut them into 1-inch thick rounds.
  • First Cook (Soften): Lightly brush the plantain pieces with olive oil. Place in the air fryer at 325°F (160°C) for 8,10 minutes. They should be tender enough to smash but not browned yet.
  • The Smash: Remove them and use a tostonera (or the bottom of a heavy glass) to flatten them to about half their original height.
  • Second Cook (Crisp): Increase the air fryer temperature to 400°F (200°C). Brush the flattened tostones with a tiny bit more oil and cook for 5,7 minutes until the edges are golden brown and crispy.
  • Season: Remove from the air fryer and immediately sprinkle with sea salt and a fresh squeeze of green lemon.
  • Make Mojo: While the tostones cook, whisk together the garlic, parsley, olive oil, salt, and pepper. Serve warm on the side or drizzled on top.

  • The Salt Water Soak: For extra moisture, soak the raw plantain chunks in salted water for 5 minutes before the first air fry. Pat them very dry before adding the oil.
  • The Lemon Tradition: Always add that final squeeze of green lemon; it cuts through the starch and elevates the garlic notes.

Storage + Meal Prep

  • Fridge: Pre-smashed tostones (after the first cook) can be kept in an airtight container for 3 days. Simply do the "Second Cook" stage right before serving.
  • Freezer: You can freeze the smashed tostones for up to 2 months. Cook them directly from frozen in the air fryer at 400°F.
  • Mojo: Store the mojo separately in a jar for up to 1 week.

Can I make these in a pan? Yes, you can pan-sear them with minimal oil, but the air fryer provides the most "fried-like" crunch.

Are tostones low-carb? Plantains are higher in carbs, but using the air fryer and pairing them with high protein makes them fit perfectly into a balanced "Nourish After 45" lifestyle.

Can I use yellow (ripe) plantains? This specific technique is for green plantains. Ripe plantains (maduros) have more sugar and require lower heat to prevent burning.

    I love tostones and make them all the time at home with cilantro chimichurri sauce but trying your garlic mojo next time. I'm trying to eat more low carb and it's great how nicely tostones fit in with that diet. Also, I feel like I'm cheating when I'm not 🙂 Have a great weekend!

      To make the garlic mojo you will need:

      2 tablespoons flat leave parsley, finely chopped
      2 garlic cloves, crushed
      Salt and pepper to taste
      3 tablespoons olive oil

      Mix all the ingredients together, and that’s it. Note:You can always use another fresh herb to do this mojo, like coriander or basil, it's up to you!

      2 dientes de ajo, machacados
