Air Fryer Tostones (Twice-Cooked Green Plantains)

Ingredients

For the tostones

  • 2 green plantains
  • 1,2 tablespoons olive oil for brushing
  • Sea salt to taste
  • 1 squeeze of green lemon A traditional essential to brighten the flavor

For the Garlic Mojo

  • 2 tablespoons flat-leaf parsley finely chopped
  • 2 garlic cloves crushed
  • 3 tablespoons extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  • Prep: Peel the plantains and cut them into 1-inch thick rounds.
  • First Cook (Soften): Lightly brush the plantain pieces with olive oil. Place in the air fryer at 325°F (160°C) for 8,10 minutes. They should be tender enough to smash but not browned yet.
  • The Smash: Remove them and use a tostonera (or the bottom of a heavy glass) to flatten them to about half their original height.
  • Second Cook (Crisp): Increase the air fryer temperature to 400°F (200°C). Brush the flattened tostones with a tiny bit more oil and cook for 5,7 minutes until the edges are golden brown and crispy.
  • Season: Remove from the air fryer and immediately sprinkle with sea salt and a fresh squeeze of green lemon.
  • Make Mojo: While the tostones cook, whisk together the garlic, parsley, olive oil, salt, and pepper. Serve warm on the side or drizzled on top.
