Why cauliflower rice works:
- Significantly lower in carbs than white rice
- Contains fiber that supports digestion
- Reduces the overall glycemic load of the meal
- Creates volume without excess calories
Adding kale:
- Increases micronutrients (vitamin K, vitamin C)
- Adds texture and color
- Boosts antioxidant intake
Roasting first:
- Removes excess moisture
- Prevents soggy texture
- Improves flavor concentration
This is structure without sacrifice.

Texture & Flavor Guard
Important:
- Roasting dries the cauliflower so it feels fluffy, not watery.
- Stir-frying raw cauliflower alone can create sogginess.
- Kale softens but keeps slight chew for texture contrast.
- Parmesan adds umami and depth.
This is not white rice. It’s lighter and more delicate, but it absorbs sauce beautifully.

Ingredients
- 1 large head cauliflower
- 3 tablespoons olive oil divided
- 5 to 7 kale leaves chopped
- 2 cloves garlic crushed
- 1 small red onion thinly sliced
- Pinch piment d’espelette or cayenne optional
- Salt and pepper to taste
- Optional: freshly grated Parmesan cheese
Instructions
Preheat Oven
- Preheat oven to 350°F (200°C).
Rice the Cauliflower
- Using a food processor or coarse grater, pulse cauliflower into rice-like pieces.
Roast the Cauliflower
- Spread on a baking sheet in a thin, even layer.
- Drizzle lightly with olive oil and toss.
- Roast for 10 minutes, stirring halfway through.
- This step removes moisture and keeps it fluffy.
Sauté the Aromatics
- While cauliflower roasts, heat remaining olive oil in a skillet.
- Cook garlic and onion until lightly golden.
- Add kale and cook until softened but still vibrant.
Combine
- Add roasted cauliflower rice to the skillet.
- Toss to combine. Season with salt, pepper, and optional spice.
- Finish with Parmesan if desired.
- Serve warm.

Hey Matt! thank you my friend! I was pleasantly surprised! I agree with you! ?
Love cauliflower rice - so so healthy. Plus, it's an easy way to use up cauliflower quickly if you bought too much (like I often do.....hello Costco, lol). Such a yummy combo here with the kale and cauliflower! Bet this would be lovely with an egg on top too even for breakfast 🙂 !
Dawn, what a great idea! an egg on top would have been just perfect!
This cauliflower rice is a trendy thing now - I've seen it a lot recently. I don't mind though. I love cauliflower (it makes a delicious and rich mash), and I'm going to try this "rice" one day.
I had my doubts, I love real rice, but this is a good enough replacement!
You know, I've never actually made cauliflower rice. I've seen so many awesome recipes out there, but I think this one takes it to a whole new level! Turning it into stir fry form is simply genius, and I need to try this ASAP! Plus, it's super healthy, too! Thanks so much, Gaila! 🙂
Yes David, low carbs (good carbs) and super flavors in it!
