Burrata cheese with roasted cherry tomatoes

I love cherry tomatoes, their acidity and sweetness, after all the holiday eating and indulging,  it's time to get back to old good habits and lighten up our diet. and this is a perfect way of doing that. I found this beautiful vine tomatoes and season them with salt, pepper, olive oil and balsamic vinegar.

 I tasted Burrata last year for the first time in an little italian restaurant, my family use to visit, since I have fallen in love with. Burrata is a fresh Italian cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains both mozzarella and cream, giving it an unusual, soft texture. The word burrata means "buttered" in Italian.

And 15 minutes  later, in a 350F oven, they will look like this. A little dehydrated but still fairly plump, you can cook them longer if you want. At the same time I toasted some french baguette toasts to go with this hearty beautiful salad. (this is optional, if you want to keep it light you can also try son multigrain crackers).

Simple italian flavors with great products.

Ingredients

  • 1 fresh Burrata A ball
  • 15 - 20 cherry tomatoes
  • salt and fresh black pepper
  • 4 tablespoons balsamic vinegar
  • 8 tablespoons olive oil
  • 1 cup of fresh arugula leaves

Instructions

  • Toss the tomatoes lightly with half the olive oil and balsamic vinegar on a sheet pan. Spread them out into one layer and sprinkle generously with sea salt and pepper. Roast for 15 to 20 minutes, until the tomatoes are soft.
  • Transfer the tomatoes to a serving platter, place the arugula and top it with the burrata and then sprinkle sea salt and the rest of the olive oil and balsamic vinegar

Everything back to normal, the routine has now settled down and this salad is like a little proof  that new year's resolutions can work, some how, their way into your table!

  1. I don't believe I've ever had burrata, but I keep hearing the most amazing things about it. I clearly need to go out hunting for some burrata today! And those roasted tomatoes...I could eat those just by themselves! 🙂

    I could eat a big ball of burrata every single day of my life! Nothing's better than that rich, creamy flavor and I bet your roasted tomatoes take it over the top! I could eat this for dinner 🙂 Delicious!
