Best sweetener options for this recipe:

  • Monk Fruit Simple Syrup – my top pick. Clean, neutral sweetness, zero aftertaste, zero sugar.
  • Allulose Syrup – behaves more like real sugar in liquid. Great if you want a slightly richer mouthfeel.

Start with 2 tablespoons and adjust to your taste. Both dissolve beautifully in cold drinks.

SWEETNESS BOOST OPTIONS

Already sugar-free, but want more depth or complexity? Try these:

  • Add a tiny pinch of salt directly into the blender – it amplifies the fruit flavor without adding sweetness.
  • Use a splash of sparkling water instead of still – adds lightness and makes it feel more festive.
  • Add 3–4 fresh mint leaves to the blender for a mojito-margarita hybrid.
  • Frozen passion fruit pulp (if fresh is unavailable) intensifies the flavor – look for unsweetened pulp in the Latin freezer section.

WHY YOU’LL LOVE THIS

  • Real passion fruit – not a mix, not a syrup, actual fruit. That makes the flavor impossible to fake.
  • Zero sugar without the sacrifice – monk fruit and allulose taste like the real thing in cold drinks.
  • The smoky rim is the secret weapon – BBQ spice salt changes the whole experience.
  • Blood sugar-friendly – ideal for diabetic or insulin-resistant lifestyles.
  • Mocktail-ready – one simple swap makes it 100% alcohol-free without losing anything.
  • Bariatric-friendly in small portions – beautiful flavor in a small glass, no sugar load.

A tangy, tropical, zero-sugar passion fruit margarita sweetened with monk fruit syrup and finished with a bold smoky BBQ salt rim. Keto-friendly, diabetic-friendly, and absolutely worth the Friday.

Ingredients

Passion Fruit Juice

  • 3 fresh passion fruit or ½ cup frozen unsweetened passion fruit pulp
  • 2 cups water

The Margarita

  • 1½ cups fresh passion fruit juice from above
  • ½ cup fresh lime juice 5–6 large limes
  • 2 –3 tablespoons monk fruit simple syrup – adjust to taste
  • or allulose syrup for a slightly richer sweetness
  • 12 ounces silver tequila – adjust to taste
  • 3 ounces orange liqueur Grand Marnier or Cointreau
  • Several cups of ice

Smoky Rim

  • 3 tablespoons coarse salt
  • 1 teaspoon smoky BBQ seasoning
  • Lime wedge for the rim

For the Mocktail Version

  • Replace tequila with sparkling water or coconut water
  • Replace orange liqueur with 1 teaspoon orange zest + 2 tablespoons fresh orange juice
  • Increase monk fruit syrup by ½ tablespoon if needed

Instructions

Make the passion fruit juice

  • Scoop out the pulp of each passion fruit with a spoon. Add pulp to the blender and blend for 10 seconds – just enough to separate the jelly from the seeds. Do not over-blend or the seeds will break and add bitterness. Pour through a fine mesh sieve into a large pitcher, pressing the pulp to get every drop.

Make the smoky rim

  • Mix coarse salt and BBQ seasoning on a small flat plate. Run a lime wedge around the rim of each glass and press into the salt mix. Set aside.

Mix the margarita

  • To the pitcher with passion fruit juice, add lime juice, monk fruit syrup (start with 2 tablespoons, taste, adjust), tequila, and orange liqueur. Add ice and stir vigorously until slushy. Taste and adjust sweetness or tequila before serving.

Mocktail version

  • Follow the same steps but replace the tequila with sparkling water or coconut water and replace the liqueur with orange juice + zest. Stir over ice until cold and slushy.

Serve

  • Pour into rimmed glasses over fresh ice. Serve immediately.

TEXTURE TIPS

The biggest enemy of a good margarita is watery or over-blended. Here’s how to avoid that:

  • Blend the passion fruit pulp only 10 seconds – longer and the seeds crack open and create a gritty texture.
  • Always taste before serving – the passion fruit tartness varies dramatically from fruit to fruit. Adjust your sweetener accordingly.
  • For a slushy texture, add ice directly to the pitcher and stir hard. For a cleaner liquid version, serve over ice in the glass.
  • Frozen passion fruit pulp (unsweetened) is your best backup – it’s already seedless and gives a more consistent result.
  • The smoky rim needs to dry slightly before pouring – rim the glasses first, set aside, then mix the drink.

Batch Prep how-to

This is a crowd-pleasing pitcher drink – make it work for you:

  • Make the passion fruit juice and lime juice up to 2 days ahead and store in a sealed jar in the fridge.
  • Pre-mix the full cocktail base (no ice yet) in a pitcher and refrigerate up to 24 hours. Add ice and stir just before serving.
  • For a party, double or triple the batch – it scales perfectly.
  • For a mocktail station, keep one alcohol-free pitcher alongside the cocktail pitcher so everyone has an option.
  • Bariatric tip: Serve in a small 4 oz glass with lots of ice to keep portions intentional while still feeling festive.

STORAGE TIPS

  • Passion fruit juice: Keeps 2 days in the fridge in a sealed jar.
  • Full mixed drink (no ice): Up to 24 hours refrigerated. Stir before serving.
  • Do not freeze: The lime juice turns bitter when frozen.
  • Rim salt mix: Store in a small jar at room temperature indefinitely. Make extra – it’s great on the edge of a michelada too.
