Ingredients

The Egg Base:

  • 400 g egg whites
  • 3 large whole eggs
  • A pinch of salt and black pepper to taste

The Protein:

  • 100 g turkey patties pre-cooked and diced
  • 100 g turkey sausage pre-cooked and sliced or crumbled

The Produce:

  • 100 g fresh tomatoes diced (and drained of excess juice)
  • 100 g fresh spinach roughly chopped

The Sazón Touch:

  • Optional: A tiny pinch of Dominican oregano in the eggs adds a beautiful subtle depth.

Instructions

Prep the Oven and Pan

  • Preheat your oven to 350°F (175°C). Line a standard half-sheet pan (around 13x18 inches) with parchment paper, or grease it thoroughly with a light brush of cooking fat to ensure the egg whites don't stick.

Sauté and Wilt (Pro-Tip for Texture)

  • Because spinach and tomatoes release a lot of water, quickly toss the chopped spinach into a hot skillet for 1 minute just until it wilts, then squeeze out the excess moisture. This prevents your sheet pan bake from getting soggy.

Assemble the Base

  • Whisk the 400g of egg whites, 3 whole eggs, salt, and pepper together in a large bowl until fully combined and slightly frothy.

Layer the Ingredients

  • Evenly distribute the diced turkey patties, turkey sausage, wilted spinach, and diced tomatoes across the bottom of your prepared sheet pan. Slowly pour the whisked egg mixture over the top, ensuring it flows evenly into all the corners.

Bake to Perfection

  • Place the pan on the center rack of your oven. Bake for 20 to 25 minutes.
  • How to check for doneness: The edges should be golden brown, and the center should be firm to the touch and no longer jiggle. If you insert a toothpick into the center, it should come out clean.

Slice and Serve

  • Let it cool for about 5 minutes before slicing. Cut into squares for easy meal prep throughout the week!
